Nothing can replace bread, it is part of our tradition and our region. It has always been, and probably will be, the main product of our meals. However, the story of gluten and genetically modified crops has called into question its nutritional benefits.
So, today, we can choose among the classic “white loaf,” integral, stainless various seeds and others. A lot less often you will find in stores bread without yeast and flour.
The Recipe For Sourdough
If you want to avoid yeast when making bread, use what the ancient Romans used. This type of bred is recommended for people who are prone to fungal infections or patients with candidiasis. To make sourdough, simply mix flour and water in a ratio of 1: 1 or 2: 1.
Leave it covered at a room temperature for several days. The bacteria in the dough will cause a characteristic sour smell. After a few days, add a tablespoon of flour and a tablespoon of water and stir.
After a week you will have sourdough from which you can make a homemade wholemeal bread without yeast. If you wish, add a teaspoon of honey or sugar.
How To Make Bread Without Yeast At Home
To prepare bread without yeast, you need the following ingredients:
- 3 1/2 cups of spelled flour,
- 8 oz. juice of white grapes,
- 200 g of sourdough (seasoned at room temperature),
- 75 g of fresh goat cheese (seasoned at room temperature),
- 1 tablespoon of honey
- 2 tablespoons of olive oil,
- 1 teaspoon of anise seeds,
- 1 teaspoon of cumin seeds,
- 1/2 teaspoon of salt.
Unleavened bread preparation:
Mix the sourdough with half a cup grape juice, 0.22 pound spelled flour and honey.
Put a cloth over it and let it stay in a warm place for at least 3 hours.
Afterwards, when it doubles in volume, add the remaining ingredients and mix until you get a compact homogeneous mixture.
Cover it again with a cloth and let it stay in a warm place throughout the night.
In the morning, all you need to do is stir, pour it into a mold and bake it in a preheated oven at 390 F degrees for about 25 minutes.
